Easy Unstuffed Cabbage Casserole

Easy Unstuffed Cabbage Casserole

INGREDIENTS
For the oven-braised cabbage:
  • Cooking spray or vegetable oil

  • 1 large green cabbage (about 2 1/2 pounds)
  • 1/4 cup low-sodium chicken broth or water
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  •
For the sauce and serving:
  • 1 tablespoon vegetable oil
  • 1 medium yellow onion, diced (about 2 cups)
  • Kosher salt

  • 2 pounds lean ground beef or ground dark turkey
  • 3 (15-ounce) cans crushed tomatoes
  • 3 tablespoons raisins
  • 3 tablespoons packed light brown sugar
  • 1 teaspoon ground cinnamon
  • Finely grated zest of 1 medium lemon

  • Juice of 1 lemon lemon (about 3 tablespoons)

  • Freshly ground black pepper

  • 6 cups hot, cooked white rice, for serving (optional)

INSTRUCTIONS
For the cabbage:
  1. Arrange a rack in the middle of the oven and heat to 325°F. Coat a 9x13-inch baking dish with cooking spray or oil; set aside.

  2. Quarter the cabbage through the core. Cut each quarter in half, leaving a piece of the core attached to each wedge to hold it together, for a total of 8 wedges.

  3. Arrange the wedges in a single layer in the baking dish, tucking them in tightly, if necessary. Pour the broth or water over the wedges and season with the salt and pepper. Cover tightly with aluminum foil and bake until the cabbage is tender but not falling apart, about 45 minutes. Meanwhile, make the sauce.

  4.

For the sauce:
  1. Heat the oil in a large skillet over medium-high heat until shimmering. Add the onion and a pinch of salt and cook until softened, stirring often, about 5 minutes. Add the ground meat and cook, breaking up the meat into small pieces with a wooden spoon, until no longer pink, about 5 minutes.

  2. Stir in the tomatoes, raisins, brown sugar, and cinnamon. Simmer for 15 minutes, stirring occasionally. Keep warm over very low heat until the cabbage is ready. Just before serving, stir the lemon zest and juice into the sauce. Taste and season with salt and pepper as needed.

  3. To serve, spoon rice onto serving plates. Top with a wedge of cabbage and ladle the sauce over the top.

  4.

RECIPE NOTES

Make ahead: The sauce can be made up to 1 day ahead. Cool, cover, and refrigerate. Cook the cabbage fresh because it does not reheat well.

Variation: Instead of braising the cabbage, grill it! Heat a gas or charcoal grill (or grill pan) to medium. Lightly brush the cut sides of the wedges with vegetable oil. Arrange them cut-side down in a single layer on the grate. Cover and cook until the cabbage begins to wilt and soften and the leafy edges blacken a bit, 6 to 8 minutes. Flip each wedge over, cover, and cook the other side. Charred and crisp-tender are delicious, but burnt and raw hold no charm, so reduce the heat or move the wedges to the cool side of the grill as needed.

Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.

Asian Beef Buns

Ingredients

Dough

c. warm water

1 package active dry yeast

3 1/2 tbsp. sugar

1 3/4 c. unsifted bread flour

1/2 tsp. salt

2 large eggs

3 tbsp. vegetable oil

Filling

1 tbsp. vegetable oil

1 tbsp. peeled, chopped fresh gingerroot

2 clove garlic

3/4 lb. ground beef round

2 tbsp. hoisin sauce

2 tbsp. light soy sauce

1/4 tsp. paprika

tsp. ground red pepper

1 c. finely chopped green onions

1/2 c. chopped roasted sweet red pepper

black sesame seeds

Egg Glaze

1 large egg

2 tbsp. milk

Directions

  1. Prepare Dough: In small bowl or 1-cup measuring cup, combine water, yeast, and 1/2 tablespoon sugar; stir to dissolve yeast. Let stand until foamy -- about 5 minutes.
  2. In medium-size bowl, combine 1 1/2 cups flour, the remaining 3 tablespoons sugar, and the salt; stir in yeast mixture, eggs, and oil, mixing until combined.
  3. Turn dough out onto floured surface. Knead dough, adding as much of remaining bread flour as necessary to prevent stickiness, until smooth and elastic -- about 8 minutes.
  4. Wash, dry, and oil mixing bowl; place dough in bowl and turn to bring oiled side up. Cover with clean cloth and let dough rise in warm place, away from drafts, until double in size -- about 1 1/2 hours.
  5. Meanwhile, prepare Filling: In large skillet, heat oil over medium heat; add gingerroot and sauté 1 minute. Add garlic and cook 30 seconds. Stir in beef, hoisin sauce, soy sauce, paprika, and ground red pepper. Cook until beef browns. Remove from heat and stir in green onions and sweet red pepper. Set aside.
  6. Grease 2 baking sheets or line with parchment paper. When dough has doubled, punch down and shape into a 10-inch-long log. With serrated knife, cut log crosswise into ten 1-inch-thick slices. On lightly floured surface, roll out one slice to a 4-inch round. Roll out or press just around the edge of round so that the middle is slightly thicker and the round is 5 inches wide. Fill center of round with 1 heaping tablespoon beef filling; gather up edge to form a pouch and pinch together tightly to seal bun. Turn bun over and gently shape into a ball; place seam side down on greased sheet. Repeat with remaining slices and filling. Cover beef buns with clean cloths or plastic wrap and let rise 30 minutes. Meanwhile, prepare Egg Glaze.
  7. Heat oven to 350 degrees F. Brush buns with Egg Glaze and sprinkle, if desired, with sesame seeds. Bake 20 to 25 minutes or until well browned. Cool buns on wire rack; serve warm.
  8. Egg Glaze: In small bowl, beat together 1 large egg and 2 tablespoons milk until blended; refrigerate when not using.

#Easy chicken tender recipes

Everyone’s two-thumbs up favorite for a family-friendly meal, chicken fingers get a major upgrade from the standard variety with just a few quick improvements from Betty Crocker. Your secret ingredient for these homemade chicken tenders is Progresso™ plain or Italian style panko crispy bread crumbs.

#Easy chicken tender recipes

Ingredients

1/4 cup Gold Medal™ all-purpose flour

1 egg

1 tablespoon water

1 cup Progresso plain or Italian style panko crispy bread crumbs

1/2 cup grated Parmesan cheese

1 1/4 lb (20 oz) chicken breast tenders (from two 14-oz packages)

Favorite dipping sauce, if desired

Steps

  • 1 Heat oven to 425°F. Line cookie sheet with foil; spray with cooking spray.

  • 2 In shallow dish, place flour. In another shallow dish, beat egg and water. In third shallow dish, mix bread crumbs and cheese. Coat chicken with flour; dip into egg mixture, then coat with bread crumb mixture. Place on cookie sheet.

  • 3 Bake 15 to 20 minutes, turning once, until chicken is no longer pink in center and coating is golden brown. Serve with dipping sauce.

Expert Tips

  • A quick dredging in the flour, then egg before the final panko-Parmesan dip guarantees that the crispy coating will stick to the chicken once they’re baked.
  • Get air circulating for crunch—arrange the coated tenders on a wire cooling rack that has been sprayed with cooking spray on a rimmed baking pan. Bake in the hot oven until golden brown.
  • Have fun with dips. Mix a spoonful of basil pesto in a good mayonnaise, some plain Greek yogurt with a lot of chopped fresh dill and lemon zest, ranch dressing with crumbled bacon and lots of freshly ground pepper stirred in—or just straight up barbecue sauce.
  • For extra-crispy tenders, drizzle them with a couple of tablespoons of melted butter before baking.
