INGREDIENTS
1 1/4 lb. cheese tortellini
2 tbsp. extra-virgin olive oil, plus more for drizzling
1 lb. medium shrimp, peeled and deveined
1/2 tsp. crushed red pepper flakes, plus more for serving
kosher salt
Freshly ground black pepper
1/4 c. freshly chopped chives, plus additional for serving
DIRECTIONS
- In a large pot of salted boiling water, cook tortellini according to package directions.
- Five minutes before tortellini is cooked, heat oil in large nonstick skillet over medium-high heat. Add shrimp and crushed red pepper flakes and season with salt and pepper. Cook shrimp, tossing frequently, 2 to 4 minutes. Add tortellini and chives and toss to combine.
- Serve hot, drizzled with more olive oil and sprinkled with red pepper flakes and chives.
